Foodie Friday: Penne w/Vodka Sauce & Capicola
As I'm sitting here eating my veggie lasagna, I realized that it's been awhile since I've posted any type of italian dish. So here is an interesting dish that is only 311 calories and 3 g fat, with a high fiber and protein content. Enjoy!!! Find this and other great recipes on www.eatingwell.com

INGREDIENTS
- 12 ounces whole-wheat penne
- 1 2-ounce piece capicola, or pancetta, finely diced (see Tip)
- 1 small onion, chopped
- 3 cloves garlic, chopped
- 1/2 cup vodka
- 1 28-ounce can crushed tomatoes
- 1/4 cup half-and-half
- 2 teaspoons Worcestershire sauce
- 1/4-1/2 teaspoon crushed red pepper
- 1/4 cup chopped fresh basil
- Freshly ground pepper, to taste
PREPARATION
- Bring a large pot of water to a boil. Cook penne until just tender, 12 minutes or according to package directions.
- Meanwhile, cook capicola (or pancetta) in a large saucepan over medium heat until crisp, about 4 minutes. Drain on a paper towel.
- Return the saucepan to medium-low heat; add onion and garlic and cook until the onion is translucent, about 1 minute. Increase heat to high; add vodka and bring to a boil. Boil until reduced by about half, about 2 minutes. Stir in tomatoes, half-and-half, Worcestershire sauce and crushed red pepper to taste; reduce to a simmer and cook until thickened, about 10 minutes.
- Drain the pasta; serve topped with the sauce and sprinkled with the capicola (or pancetta), basil and pepper.
TIPS & NOTES
- Tip: Capicola and pancetta can be found in the deli section of most large supermarkets. Buy one thick piece for this recipe.

Foodie Friday: Gluten Free Spiced Pumpkin Cupcakes
My sweet tooth is officially out with this yummy recipe post by none other than Trish Cardone! She is always spoiling me posting these yummy bits!

Spiced Pumpkin Cupcakes
These cupcakes don’t have quite the perfect rise to them because I add so much pumpkin in them. I choose to keep the amount of pumpkin puree because it keeps the cupcakes so moist and flavorful. Besides, if you are frosting these, the low rise doesn’t even show. Come back on Monday for my new recipe of chocolate buttercream! Decadent Ganache also works.
Yield: 15 cupcakes
The night before mix up the following:
- 2 cups of your choice of whole grain gluten free flour (preferably freshly ground ), such as millet, brown rice, amaranth, or combination blends. I have used both millet and 1/3 amaranth and 2/3 millet.
- 1 tablespoon chia seeds, ground if desired
- 3/4 cup of warm water
- 1 tablespoon raw apple cider vinegar (you can substitute well fermented kombucha, water kefir, whey, coconut kefir)
Leave covered in a warm place for 12-24 hours. Preheat the oven to 375F and line a muffin pan with baking cups. Then add the following to the bowl.
- 2 eggs, lightly beaten
- 1 cup of pumpkin puree
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon cloves
or allspice
- 1/2 teaspoon of nutmeg
- 1/3 cup of coconut oil, melted gently
- ½ to 1 cup of whole cane sugar, coconut/palm sugar, or maple sugar
Whisk to combine and then fill muffin pans 3/4 full. Cook for 15-20 minutes, or until a toothpick comes out clean when poked in the middle of the muffin. Let sit in muffin pans for 5 minutes, and then gently remove to cooling rack to completely cool.
Once cool, frost and sprinkle with Let’s Do Organic Sprinkelz , if desired.

In Just 9 Months, Georgia Goes from 10th to 6th in Female Homicides from Domestic Violence
Today, I was sent the following email from the Georgia Coalition Against Domestic Violence:
"Two weeks ago, Georgia was found to have the sixth-highest homicide rate in the nation for women killed by men, according to a study released by the Violence Policy Center. As we once again mark October as Domestic Violence Awareness Month, we are reminded of how far we've come and how much work remains to be done. Today, our call for an end to abuse, for a commitment to prevention, and in support of local programs is echoed by the President of the United States. It is our pleasure to forward the proclamation, recently released from President Obama in support of Domestic Violence Awareness Month. Each October, we remember the many lives that were cut short by domestic violence during the past year. We applaud the advocates in domestic violence programs and our allies throughout Georgia who with tireless compassion and dedication help create opportunities for the safety, liberty and dignity of survivors everywhere." -----
